Ingredientes:
4 cucharadas de aceite de oliva
2 cucharadas de cebolla, finamente picada
4 dientes de ajo
½ kilo de champiñones frescos rebanados
4 cucharadas de tequila
1 cucharadita de sal
Pimienta negra molida Miravalle, al gusto
2 cucharadas de aceite
2 Chiles guajillos Miravalle grandes y cortados en aros
Sal al gusto
Modo de Preparación:
Calienta las 4 cucharadas de aceite de oliva en una cacerola a fuego medio. Agrega la cebolla y el ajo, y acitrona durante unos 5 minutos. Sube la flama y agrega los champiñones rebanados. Sazona con 1 cucharada de sal y pimienta al gusto. Mueve con una cuchara de madera hasta que estén cocidos, pero todavía un poco duros.
Baña con el tequila y, si es posible, flamea siempre y cuando lo puedas hacer de manera segura. De lo contrario, sólo se permite que se evapore el tequila y desaparezca su aroma. Deja que se consuma el líquido.
Mientras, prepara los anillos de chile guajillo. Calienta las 2 cucharadas de aceite, agrega los chiles cortados en aros y fríe hasta queden crujientes. Retira del sartén, escurre y espolvorea con sal.
