El popular burrito Mexicano es muy fácil de elaborar. Esta versión con frijoles es una receta de Santa Fe.
Ingredientes:
(4 Burritos)
7 oz (200g) de carne magra de buey picada
Aceite
1 diente de ajo
2 chiles
4 tortillas de 10 pulgadas (25cm) de diámetro (grandes)
3.5 oz (100g) de frijoles refritos,
12 olivas negras sin hueso
3.5 oz (100g) de queso manchego
Sal,
Lechuga
Salsa guacamole
Preparación:
1. Remojar los frijoles en agua durante 6-8 horas. Cocer en una cazuela cubriéndolos con agua, con la cebolla, el ajo y el chile, durante una hora.
2. Escurrir los frijoles conservando el agua. A continuación, se doran en una sartén con el aceite mientras los aplastamos con un tenedor. Añadir parte del agua de la cocción y cocer durante unos minutos.
3. Freír la carne picada en aceite, y le añadir sal, ajo y chile. Calentar las tortitas en el horno para ablandarlas. Después rellenar con la carne, los frijoles, el queso y las olivas. Cerrar las tortitas y hornear durante unos 5 minutos.
4. Servir con salsa guacamole y lechuga.
